Broccoli falafels

This broccoli falafel recipe is a great meat-free meal option full of fibre and protein and you can serve them with any of your favourite salad ingredients. You can easily swap the broccoli for cauliflower if you prefer and switch up the herbs and spices you use depending on what you like. Yields16 Servings
 1 broccoli, blended into rice
 400 g can of chickpeas, rinsed and drained
 1 handful of parsley
 5 tbsp plain flour
 2 tsp minced garlic
 2 tsp cumin
 2 tsp zaatar
 1 tsp sesame seeds

Blend all ingredients in a food processor until well combined

Refrigerate mixture until cool to help bind the ingredients

Roll into balls and bake or fry until cooked through and golden

Serve with your favourite salad ingredients and my beetroot dip recipe
