 8 medjool dates, pitted
 5 tbsp shredded coconut
 1 tbsp coconut oil
 1 tsp maple syrup
 ½ tsp vanilla essence
Topping
 2 squares of dark chocolate, melted
 Shredded coconut
 Cacao nibs

Combine all stuffing ingredients in a bowl and stuff into each pitted date

Top with melted chocolate, extra coconut and cacao nibs

Refrigerate until chocolate has set (optional)
