Rhubarb and strawberry breakfast crumble
3 sticks of rhubarb, chopped
1 punnet of strawberries, chopped
1 cup rolled oats
½ cup shredded coconut
2 tbsp maple syrup
2 tbsp chia seeds
1 tbsp butter or nuttelex
1 tsp vanilla essence
Pinch of ground cinnamon

Combine all fruit in a small baking dish and set aside

Add all other ingredients to a bowl and mix until combined

Add crumble mixture on top of fruit and bake in the oven for around 20 minutes until golden
