Haloumi and brown lentil salad
2 cups greens (I used baby spinach)
½ cup tinned brown lentils, rinsed and drained
¼ cup diced red onion
Half a punnet of cherry tomatoes, halved
Half a Lebanese cucumber, diced
Half a block of haloumi, sliced
DRESSING
1 lemon, juiced
2 tbsp olive oil
1 tsp oregano

Cook haloumi in frypan until golden

Combine all salad ingredients in a bowl and top with cooked haloumi

Mix all dressing ingredients in a small bowl and pour over salad as desired
