Sweet potato, spinach and feta quiche
8 eggs, whisked
4 Mountain bread wraps
2 cups diced and cooked sweet potato
1 cup baby spinach
¾ cup your choice of milk
100 g diced feta cheese
Handful of chopped shallots or herbs

Preheat oven to 180C

Line a baking dish with mountain bread wrap overlapping as needed

Combine milk and eggs in a bowl

Add vegetables into the baking dish on top of the wraps

Pour egg mixture over the top and sprinkle on feta cheese and shallots

Cook for around 40 minutes until cooked through and golden on top
