Roasted broccoli and cauliflower soup

 1 small brown onion, chopped
 ½ broccoli, cut into florets
 ½ cauliflower, cut into florets
 500 ml vegetable stock
 1 tbsp olive oil
 1 tsp minced garlic
 1 tsp cumin
 1 tsp thyme
Optional toppings
 Roasted chickpeas
 Extra roasted cauliflower and broccoli

Preheat oven to 180C

Add cauliflower and broccoli florets to a lined oven tray and roast for around 20 minutes until cooked

Cook onion in olive oil and garlic in a large pot until browned

Add all other ingredients and simmer on a low heat until vegetables are soft

Allow to cool slightly and blend until smooth
