GF DF Lime and coconut cakes
2 cups almond meal
2 limes, juiced and zested
¾ cup vanilla coconut yoghurt
¼ cup coconut flour
¼ cup shredded coconut
1 egg, whisked
1 tbsp maple syrup or honey (optional)
1 tsp vanilla essence
1 tsp baking powder
Coconut lime icing
3-4 tbs vanilla coconut yoghurt
½ lime, juiced and zested (zest and slice the remaining half for topping)

Preheat oven to 180C

Add cake ingredients to a bowl and mix until combined

Pour mixture into a lightly oiled bar cake mould and bake for 30 minutes until golden

Combine icing ingredients and spread on top of cakes once cooled

Top each cake with remaining lime slices and zest
