Coffee date and walnut loaf
2 bananas, mashed
2 cups self raising flour, sifted
2 eggs
½ cup chopped walnuts (set aside half for topping)
¼ cup pitted dates
3 tbsp maple syrup or alternative
4 shots of espresso coffee

Preheat oven to 180C and line a loaf tin with baking paper

Add all ingredients to a mixing bowl and stir until combined

Pour mixture into lined loaf tin, top with extra walnuts and bake in the oven for 40-50 minutes until cooked through
