Chai spiced apple and walnut loaf
 2 ½ cups almond meal
 ½ cup walnuts, chopped
 4  eggs, whisked
 1  green apple, chopped
 60 ml chai tea
 3 tbsp maple syrup
 2 tbsp coconut or olive oil
 1 tbsp ground cinnamon
 1 tsp ground nutmeg
 1 tsp bicarb soda
Topping
 ½  green apple, sliced
 Extra chopped walnuts

Preheat oven to 180C

Combine all ingredients in a bowl

Pour mixture into a lined loaf tin and top with additional apple slices and walnuts

Bake in oven for 40-45 minutes (cover with aluminium foil for the last 10 minutes if needed so the top doesn't burn)
