Apple pie protein mug cake
½ apple, finely diced or grated
¼ cup oat flour
¼ cup milk
1 serve of vegan vanilla protein
1 egg, whisked
1 tsp baking powder
1 tsp cinnamon
½ tsp nutmeg
Toppings
1 tbsp your favourite yoghurt
Leftover diced apple
Pinch of cinnamon

Combine all ingredients in a bowl, reserving some diced apple for topping

Pour mixture into a lightly oiled mug and microwave for 60-90 seconds

Serve with recommended toppings

Delicious! I think next time I will cook the apple a bit to soften, but the flavor of the mug cake is perfect. I topped with the apple and cinnamon, as recommended, but added 1/2 tbsp of crunchy almond butter as well. Yum!
