Rainbow veggie slice

 8 eggs, whisked
 1 zucchini, grated
 1 carrot, grated
 1 small onion, sliced
 1 cup tinned corn (200g can)
 1 cup self raising flour
 ¼ cup grated parmesan cheese
 1 shallot, sliced
 Handful of fresh parsley (or other herbs)

Preheat oven to 180C

Combine all ingredients in a bowl

Pour mixture into a lined or lightly oiled baking dish

Bake in oven for around 40 minutes until cooked through and golden
