Prawn pesto pasta
280 g garlic marinated prawns (mine were from Aldi)
250 g fettucine pasta
2 cups cherry tomatoes, halved
2 cups rocket or spinach
Parmesan cheese to serve (optional)
Basil pesto
1 cup basil
½ cup cashews (or any other nuts)
¼ cup olive oil
¼ cup parmesan cheese
2 tbsp lemon juice
1 tsp minced garlic

Boil a saucepan of water and cook pasta as per packet

Combine all basil pesto ingredients in a food processor and blend until desired texture

Cook prawns in a frypan with a little olive oil, adding in tomatoes and greens at the end

Drain pasta, add pesto and stir through prawn mixture until combined
5
Serve topped with extra parmesan if desired
