Zucchini and carrot fritters

  • Save

 1 zucchini, grated (use a colander to remove excess liquid)
 1 carrot, grated
 1 egg, whisked
 1 cup almond meal
 ½ cup tapioca or corn flour
 3 tsp your choice of herbs (I used cumin, coriander and harissa)
 salt and pepper to taste
To serve
 Juice of 1 lime
 4 tbsp your choice of yoghurt

Mix all the ingredients in a bowl

Cook 1 tbs amounts in an oiled frypan until golden and crispy on both sides

Serve with lime yoghurt (optional)
