Vegan sweet potato and spinach lentil dahl

 1 small brown onion, diced
 1 tbsp olive oil
 1 tbsp minced garlic
 1 tbsp minced ginger
 2 tsp ground turmeric
 2 tsp cumin
 1 tsp chilli flakes (or fresh chilli)
 ½ tsp ground cloves
 1 sweet potato, diced
 1 tin of diced tomatoes
 1 tin of coconut milk
 3 cups baby spinach
 2 cups dried red lentils
 2 cups water

Cook onion in olive oil and spices in a large pot until soft

Add in all other ingredients and combine

Simmer for around 40-50 minutes until lentils are soft, adding in 2 cups of water if needed
