Three ingredient Christmas fruit cake

 500 g mixed fruit
 300 ml bottle of iced coffee (you can use Breaka or a dairy free option)
 1 cup self raising flour

Preheat oven to 180C

Soak mixed fruit in the iced coffee overnight in a large bowl

Mix in the self raising flour, place in a bar cake pan (makes 6 mini cakes) and cook for 30 minutes until golden. If you use a larger cake pan you may need to increase the cooking time
