Spring greens salad

 2 cups baby spinach
 1 bunch of broccolini, chopped and steamed
 1 bunch of asparagus, chopped and steamed
 1 cup edamame
 ½ cup cooked quinoa or brown rice
 50 g crumbled feta cheese
 ¼ cup chopped parsley
 ¼ cup chopped mint
 ¼ cup chopped almonds
Dressing
 ½ lemon, juiced and zested
 2 tbsp olive oil
 1 tbsp Dijon mustard
 Salt and pepper to taste

Combine all prepared ingredients in a large salad bowl

Mix dressing ingredients together and drizzle over salad
