Slow cooker chicken cacciatore

 2 diced chicken breast
 1 diced brown onion
 1 tbsp minced garlic (or more)
 2 x 400g tins of diced tomatoes
 2 cups baby spinach
 1 cup chopped mushrooms
 1 cup pitted black olives
 1 handful fresh basil

Cook diced onion in olive oil or butter until brown

Add in chicken and cook until just brown

Add in remaining ingredients and simmer until chicken is soft - 40 to 50 minutes will result in melt in your mouth chicken

Serve with crusty bread or some pasta or rice
