Prawn and nectarine salad with chilli and lime dressing

 250 g prawns
 2 cups baby spinach or rocket
 1 nectarine, sliced
 ½ red onion, sliced
 ¼ cup macadamias, chopped
 ¼ capsicum, sliced
 1 tbsp olive oil (for cooking)
 1 tsp minced garlic
Chilli and lime dressing
 1 lime, juiced and zested
 1 tbsp olive oil
 1 tsp honey
 ½ tsp garlic
 Pinch of chilli flakes

Fry prawns with olive oil and minced garlic until cooked through

Add all dressing ingredients together and set aside

Combine all other salad ingredients to a large bowl with cooked prawns and drizzle dressing over the top
