Miso noodle soup

 1 chicken breast, diced
 90 g soba noodles
 1 bunch of broccolini
 1 large carrot, sliced into rounds
 2 cups vegetable stock
 2 cups water
 ¼ cup shelled edamame beans
 1 tbsp white miso paste
 1 tsp crushed garlic
 1 tsp ginger, finely chopped
Toppings
 2 tbsp seaweed flakes
 2 tbsp fresh parsley, chopped

Cook soba noodles as per packet and set aside

Add garlic, ginger and miso to a large pot and lightly brown

Add in stock, water and vegetables and cook until just soft

Add in diced chicken to soup and poach until well cooked (or alternatively cook first in a frypan)

Add in cooked noodles and served topped with seaweed and fresh parsley
