Lentil and veggie curry

 2 cups veggie stock
 2 cups water
 1 tin of coconut milk
 3 diced potatoes
 1 diced sweet potato
 3 cups baby spinach
 2 cups red lentils
 2 tbsp curry powder
 1 stick ground tumeric
1

Add all ingredients to a large pot and simmer on low until lentils are soft and liquid has reduced

Serve with rice or quinoa and top with fresh herbs and chilli
