 1 cup self raising flour
 1 egg
 ½ cup milk
 1 lemon, juiced and zested
 2 tbsp maple syrup or honey (optional)
 1 tbsp chia seeds
 1 tbsp poppy seeds
 ½ tsp baking powder
Optional toppings
 2 tbsp your choice of yoghurt
 Lemon zest
 Handful of fresh blueberries

Combine all ingredients in a bowl

Pour desired amount into a lightly oiled frypan and cook until golden
