Healthy Chicken Pad Thai

 2 -3 diced chicken breasts
 200 g rice noodles
 2 eggs
 1 diced capsicum
 2 diced carrots
 1 small broccoli, cut into florets
Sauce
 ¼ cup tamari or soy sauce
 ¼ cup fish sauce
 3 tbsp honey
 2 tbsp peanut butter
 1 tbsp apple cider vinegar (optional)
 1 lime, juiced
To serve
 fresh coriander
 diced shallots
 crushed peanuts

Cooked diced chicken breasts in a frypan until brown

Add vegetables into frypan and cook until soft

Soak rice noodles in boiling water until soft as per packet instructions

In a separate bowl, mix together all sauce ingredients and set aside

Scramble two eggs in a separate pan and add to frypan with chicken and vegetables

Add sauce and rice noodles into frypan and mix until just combined

Serve with fresh coriander, diced shallots and crushed peanuts
