 1 cup chopped dates
 1 cup mixed nuts (pecans and almonds)
 2 tsp ginger
 2 tsp vanilla essence
 1 tsp maple syrup

Add mixed nuts (I used pecans and almonds) to a blender and mix until roughly chopped

Add in rest of ingredients and mix until combined

Roll about 1 tablespoon amounts of mixture into a ball and place on a tray and place in fridge or freezer to cool
