Espresso pancakes

 1 cup plain flour
 1 egg
 ¾ cup your choice of milk
 2 shots of coffee (add more if you like)
 1 tbsp maple syrup
 1 tsp vanilla essence
 ½ tsp baking powder

Mix all ingredients in a bowl until well combined

Pour a small amount into a frypan and flip the pancake once bubbles appear on the surface

Cook the other side until golden brown

Serve with your favourite toppings - I used strawberries and maple syrup
