Crispy cauliflower tacos

  • Save

 ½ head of cauliflower, cut into florets
 2 eggs, whisked
 1 cup breadcrumbs (I made my own)
 ½ cup Grated Parmesan cheese
 1 tsp ground cumin
 1 tsp smoked paprika
To serve
 tortilla wraps
 Your favourite salad ingredients

Preheat oven to 180C

Mix breadcrumbs, grated cheese, cumin and smoked paprika in a bowl

Dip cauliflower florets into whisked egg and then into a breadcrumb mix

Place crumbed cauliflower onto a baking tray and bake for around 20 minutes or until golden

Serve on tortilla wraps with your favourite salad ingredients
