 1 ½ cups shredded coconut
 1 cup cranberries
 1 cup cashews (or any other nuts/seeds)
 ¼ cup chia seeds
 2 tbsp maple syrup or honey
 2 tbsp water
Topping
 50 g dark chocolate, melted

Melt dark chocolate on a stovetop or microwave and set aside

Add all other ingredients in a food processor and blend until combined

Pour mixture into a lined baking dish and press out into corners

Top with dark chocolate and refrigerate until set
