Choc beetroot brownies

 400 g can of beetroots, drained
 1 ½ cups almond meal
 ½ cup dark chocolate, chopped
 ¼ cup cacao or carob powder
 2 tbsp maple syrup
 1 egg, whisked
 1 tsp baking powder
 1 tsp vanilla essence

Preheat oven to 180C

Combine all ingredients except dark chocolate in a food processor until smooth

Fold in chopped dark chocolate and pour mixture into a lined baking dish

Bake for around 40 minutes or until cooked through
