 1 cup rolled oats
 1 banana, mashed
 2 small carrots, grated
 ¼ cup walnuts
 1 tbsp pepitas (for topping)
 1 tbsp chia seeds
 1 tbsp almond butter
 1 tbsp maple syrup
 1 tsp cinnamon
 ¼ tsp ground nutmeg
 ¼ tsp ground ginger

Preheat oven to 180C

Combine all ingredients in a bowl, keeping pepitas and some walnuts aside for topping

Press mixture into a lined baking dish and cook for around 25 minutes or until golden brown
